Peptitler (Grekçe: πεπτίδια; “ıvır zıvır sindirilebilirler”) tanımlanmış bir düzende, α-amino asitlerin birbirine destelanmasıyla oluşan gücük polimerlerdir.[1] Bir amino asit kalıntısı ile başkası arasındaki bağ bir “amit bağ” veya peptit bağı olarak bilinir.[1]
Tetrapeptit (Oligopeptit)
Proteinler polipeptit molekülleridir (veya çok adetda polipeptit alt birimi barındırır). Asıl başkalık peptitlerin gücük, polipeptitlerin/proteinlerin ise uzun olmasıdır.[1]
Protein sentezi sırasında her amino asit, sair amino asite kadimî, kırılmayan bir polimer olan polipeptid zincirleriyle destelanır. Polipeptid kuruluşsına sulplan amino asitlerin her biri kuruluşya peptid destelarıyla destelanır. Peptid bağının oluşumu sırasında amino asitlerden birinin amino grubu ile diğerinin karboksil grubu, aradan bir ab çıkması sonucu birleşirler.[1]
Averaj bir polipeptit zinciri 450 amino asitten oluşur.[1] Aşina en uzun polipeptit, kestirmece 27,000 amino asitten oluşan, kas dokusunda mevcut “titin”dir. Polipeptid zincirine sulplan amino asitlere kalıntı (residue) adı verilir.[1] Zincirin bir ucundaki kalıntı, bağ yapmamış, muaf amino grubu barındırır ve N ucu olarak adlandırılır. Aynı şekilde zincirin sair ucundaki muaf α-karboksil grubu olan kalıntıevet C ucu adı verilir.
